These are pampered oysters! Using the French rack system, your oysters (Crassostrea gigas) are left to mature for three years (not the normal two) in bags on racks above the sandy bottom. They are turned constantly, checked for barnacles, and are safe from the various predators, marine and mammal, that bother their poor common brethren. The Pacific oyster's pungent, oceany taste is why it is the most coveted and most widely cultured oyster in the world.

The Oyster Lease yields 4-dozen three-year-old oysters and is delivered by air (shucking instructions and an oyster shucking knife are included). To heighten anticipation, gift recipients will receive a progress report informing them about conditions in the North West bays and the hard work involved in protecting this natural resource, as well as some practical advice on the preparation of oysters (and some impractical advice from Lewis Carroll).
The personalized lease (valid for 18 months) documents include a pre-paid postcard that your recipient returns to us telling us when to deliver their 4 dozen oysters, recipes, shucking instructions, and shucking knife.
Nature Note: Scientists are studying the oysters cement-like glue in an effort to improve tooth fillings.
